Make sure that your bowl is grease free!
Whisk your egg whites on medium speed until start getting white then continue mixing on a higher speed until the mixture stands up in stiff peaks.
Add the sugar one by one with a spoon on high speed and keep mixing for about 5 min. Check with your fingers that there are not any grains, if yes, continue mixing for 3 minutes.
Finaly add the vanilla extract and mix for 2 min
Prepare your piping bag with a tip 2A and using a paint brush start colouring with your colour paste (gel) inside the bag. Carefully add the mixture to the bag.
Hold your piping bag straight about 2 cm. Start squeezing keeping in the same place and then left it up
Line 2 baking sheets with grease proof paper
Preheat the oven to 100 C and bake the meringues for about 40 minutes
